Facts:

1. In order to initiate efficient digestion of any concentrated animal protein, the stomach must secrete pepsin.

2. Pepsin can function only in a highly acidic medium, which must be maintained for several hours for complete digestion of proteins.

3. When we chew a piece of bread or potato (carbohydrate/starch), ptyalin and other alkaline juices are immediately secreted into the food by the saliva in the mouth; when swallowed, these alkalized starches require an alkaline medium in the stomach to complete digestion.

Therefore, you can probably guess what happens when you ingest protein and starch together:

When the acid and alkaline juices are secreted simultaneously in response to the incoming protein and starch, they end up neutralizing each another.

Since the liquid solution left in the stomach cannot digest either protein or starch, then, due to the multitude of bacteria that lives in the digestive tract, the proteins begin to putrefy and actually ferment in the stomach; which is the primary cause of most digestive stress, including, but not limited to bloating, colitis, constipation, cramps, gas and heartburn among others.
